Russian Kababs

Chicken and Vegetable Russian Kabab


Russian Kabab 

(Adaptation from Shireen Anwer's recipe)
This is a great combination of chicken and vegetables. It is good as a snack, lunchboxes and as a side dish with a meal. You can even use left over chicken pieces and vegetables to make these.  

Ingredients:


Chicken boneless breast -3 (boiled and shredded )
Potatoes - 4 (boiled and mashed)
Bell pepper(finely chopped cubes)-1
Carrot (finely chopped cubes and stir fried) 1
Sweet corn -½ cup
Spring onion leaves chopped -4 tbsp
Cabbage - chopped 1/2 cup
Plain flour -4 tbsp
Milk ½ cup
Butter -2 tbsp
Cheese shredded- 2 tbsp
Salt -1 tsp
Black pepper powder 1 tsp
Crushed red chilly 1 tsp
All spice powder ½ tsp
Cumin roasted powder - 1/2 tsp
Coriander leaves chopped 3 tbsp
Green chilies chopped 2
Bread crumbs - for rolling
Eggs beaten - for rolling

Method:

Heat butter in a sauce pan  and let it melt then add flour with black pepper,all spice powder, cumin powder,red chilly crushed,salt and cook till raw smell of flour goes away. 
Remove from heat and add ½ cup milk mix well and add cheese. Cook it on low heat with constant stir or whisking to remove lumps and make a thick white sauce.
 Remove from stove and add chopped capsicum, carrot,sweet corn, spring onions, chicken, cabbage, coriander, green chilies and mashed potatoes. Mix well to form a dough, make them into flat patty / kabab or whatever shape. Dip in beaten eggs (add salt and pepper to egg if you like) ,roll in crumbs and shallow fry on high heat till it gets a color. Low heat can break them. Serve hot with evening tea or a meal with daal.

Note: 
Boil potatoes and remove from water immediately after they are tender as tend to absorb water if you leave them in water and will become sticky and soggy.
If you feel its hard to shape them due to extra moisture, add fresh bread crumbs.
